Georgia Jones, an associate professor of nutrition and health sciences and an extension food specialist, teaches multiple classes about food preparation, safety and sanitation. As an extension coordinator, she works to improve Nebraskans' understanding of food literacy -- the knowledge of food, safety and nutrition as it relates to a healthy lifestyle. She works in depth with 4-H foods and health and wellness, especially among minority populations. Her current work includes Native American foods, local foods, 4-H foods curriculum and social media.
